Roasted Lemon and Garlic Cauliflower


I head of cauliflower

1/2 lemon

3 cloves of garlic crushed

Drizzle of olive oil or other vegetable oil

Salt to taste



Brake up cauliflower into florets, rinse and put into a bowl.

In a small bowl, add the lemon zest, juice, crushed garlic and olive oil.  Mix well.

Pour over cauliflower and toss fully covering the florets and sprinkle with salt.

Bake covered for 15 minutes in a pre-heated oven on a medium heat, then for the last 7-10 minutes uncovered.
